I haven’t done a Dinner Bar in quite a while—that’s what writing Fearless Feeding has done—redirected my focus! But, you’re in for a treat–this was a big winner amongst all the kids, so I’m happy to share it with you. Let me know how it goes with your family.
Today, my daughter M requested I make tostadas. She has a close friend whose family hails from Mexico and she loves having tostadas at their house, and asked that I make them. I thought they’d be fun and easy.
Remember, The Dinner Bar is an easy smorgasbord, where you will pull together ingredients and let your children assemble their own entrée.
Easy for you, fun for the kids, and the control is theirs!
You will need:
- Rice (optional)
- 1 can of refried beans (I used black bean)
- Shredded Monterey Jack cheese
- Sour cream
- Shredded lettuce
- Chopped tomatoes
- Diced onion
- Jalapeno peppers
Heat the tostadas in a 325 F oven, about 5 minutes, until crispy. Let your kids choose which toppings they want to include—here’s how we assembled them, but you can put them in any order you choose.
Add the beans and rice. Top with the “hots.” Add the cool ingredients. Top with condiments.
Voila! Everyone had a different looking tostada…what’s your favorite combo?
