By now, you’ve sent your children off to school for many days. You may have already packed several dozen lunches by now. You might even be slipping into familiar territory: the same old lunch, and the same old breakfast. Yes, this can happen, even to me.
There are ways around this same old, same old syndrome. Today I’m sharing a quick and nutritious breakfast that I think you and your kids will love.
The Egg Sandwich: a fast, healthy and “stick to your ribs” beginner–sure to satisfy and fill up your little (or big) ones.
And from my own personal experience, this is speedy (less than 5 minutes to make), tasty, and satisfying.
Here it is and I hope you (and yours) enjoy it!
You will need:
1 slice of American cheese
1 slice of deli ham or Canadian bacon
1 English Muffin
Place the English muffin in the toaster. In a microwave-safe dish, scramble the egg with a splash of water. Place in microwave oven for 1 minute. It will cook into a flat, round disk.
To assemble the sandwich, place the cheese on the hot, toasted muffin, add the egg and then the ham on top. Top with the other half of the English muffin.
Voila! The healthiest and fastest egg sandwich I know! Move over, cereal…
